Varenyky are traditional Ukrainian dumplings made from unleavened dough and filled with sweet or savoury ingredients. Often, the sweet version is with cherries
In a bowl, mix flour and salt.
Add the egg (if using), warm water, and oil.
Knead until you get a smooth, soft dough (about 8–10 minutes).
Cover and let it rest for 20–30 minutes — this makes rolling easier.
Pit the cherries and drain excess juice.
Mix cherries with sugar and cornstarch right before filling (so they don’t release too much liquid).
Roll out the dough thin (about 2–3 mm).
Cut circles using a glass (7–8 cm wide).
Place a spoonful of cherry filling in the center.
Fold into a half-moon and pinch edges tightly (very important to prevent leaks).
Bring a large pot of salted water to a gentle boil.
Add varenyky in batches.
When they float, cook for 2–3 more minutes.
Remove with a slotted spoon.
Toss gently with melted butter
Serve warm with sour cream and a sprinkle of sugar
