Syrnyki are fried Ukrainian(Eastern European) pancakes. There are made with curd cheese, flour, eggs and sugar. They are crispy and soft pancakes
Make sure the cottage cheese is well-drained and not too watery. You can place it in a fine-mesh strainer or cheesecloth for a few minutes to drain off any excess moisture.
In a large bowl, combine the cottage cheese, egg, sugar, vanilla (if using), flour, baking powder, and a pinch of salt. Mix everything together until it forms a dough-like consistency. If it’s too wet, add a bit more flour.
Lightly flour your hands or a flat surface and take small portions of the dough (about 2-3 tablespoons) and shape them into round patties, then flatten them slightly with your hands. You can make them as thick or thin as you like.
Heat a pan over medium heat and add a bit of butter or oil. Once hot, carefully place the syrnyki in the pan. Cook each side for about 2-4 minutes, or until golden brown and crispy. Don’t overcrowd the pan—fry them in batches if needed.
Remove the syrnyki from the pan and place them on a paper towel to absorb excess oil. Serve warm with sour cream, honey, or your favorite jam.
